Description

Ingredients

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha (optional)
  • Salt and pepper to taste

Instructions

  1. Combine the edamame, carrots, red bell pepper, purple cabbage, green onions, and cilantro in a large bowl. Toss well to combine.
  2. Whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, and sriracha until smooth in a separate bowl.
  3. Pour the dressing over the salad and toss thoroughly to coat all the ingredients.
  4. Season with salt and pepper to taste, adjusting based on your preference.
  5. Serve immediately or store in the refrigerator for up to three days for the flavors to meld.
