Tender chicken pieces in a creamy sun-dried tomato and spinach sauce, topped with melted cheese. This Tuscan-inspired casserole combines restaurant flavors in an easy weeknight dish.

- 6 boneless, skinless chicken breasts (about 2 pounds), cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped (oil-packed, drained)
- 8 oz cream cheese, softened
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup dry white wine (optional)
- 1/2 cup grated Parmesan cheese
- 5 oz fresh baby spinach
- 1 cup shredded mozzarella cheese
- 2 teaspoons Italian seasoning
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and freshly ground black pepper to taste
- 1/4 cup fresh basil leaves, chopped (for garnish)
- 2 tablespoons pine nuts (optional)
Instructions
- 1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- 2. Season chicken pieces with salt, pepper, garlic powder, and onion powder.
- 3. Heat olive oil in a large skillet over medium-high heat. Sear chicken pieces until golden brown, 3-4 minutes per side. Transfer to a plate.
- 4. In the same skillet, cook onion until softened, 3-4 minutes. Add garlic and cook 30 seconds.
- 5. Add sun-dried tomatoes and cook 1-2 minutes. Pour in wine and scrape up browned bits.
- 6. Add chicken broth and bring to a simmer. Whisk in cream cheese until smooth, then add heavy cream.
- 7. Stir in Italian seasoning, basil, oregano, and half the Parmesan. Season with salt and pepper.
- 8. Add spinach in batches, stirring until wilted. Return chicken to skillet and stir to coat.
- 9. Transfer mixture to prepared baking dish. Top with mozzarella and remaining Parmesan.
- 10. Bake 25-30 minutes until cheese is golden and sauce is bubbling.
- 11. Let rest 5-10 minutes before serving. Garnish with fresh basil and pine nuts.
Notes
Store leftovers covered in refrigerator for 3-4 days. Reheat gently to prevent sauce separation.
