Description

Enjoy crispy baked salmon bites served over steamed rice with fresh vegetables and a creamy bang bang sauce.


Ingredients

Scale
  • 1 lb salmon fillets
  • 1 bell pepper, diced
  • 1 cucumber, sliced
  • 1 carrot, shredded
  • 2 cups steamed rice
  • 1 avocado, sliced
  • ½ cup bang bang sauce (mix of mayonnaise, sriracha, and sweet chili sauce)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the salmon into bite-sized pieces and season with salt and pepper.
  3. Toss the salmon pieces in olive oil and bake for about 12-15 minutes until crispy.
  4. Prepare the rice according to package instructions and steam the vegetables.
  5. Assemble the bowls with a scoop of rice, topped with the salmon bites, fresh vegetables, and slices of avocado.
  6. Drizzle with creamy bang bang sauce and serve.

Notes

Best enjoyed fresh the same day, but can be reheated in the oven.
