Description

A hearty soup made with ground beef, elbow macaroni, and rich beef broth, perfect for busy nights.


Ingredients

  • 1 pound ground beef
  • 1 cup elbow macaroni
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add chopped onion and minced garlic; sauté until the onion is translucent.
  3. Add ground beef to the pot and cook until browned, breaking it up as it cooks.
  4. Drain any excess fat if necessary.
  5. Stir in diced tomatoes, beef broth, salt, pepper, and Italian seasoning.
  6. Bring to a boil, watching for bubbles on the surface.
  7. Add elbow macaroni and reduce heat to a simmer, stirring occasionally.
  8. Cook for about 10-12 minutes, or until the macaroni is tender but still al dente.
  9. Serve hot, garnished with fresh herbs if desired.

Notes

Serve with crusty bread, top with grated Parmesan cheese, or add a spoonful of sour cream for extra richness. Leftovers can be used for stuffed peppers or pasta bake.
