- 1 cup elbow macaroni
- 1 can diced tomatoes
- 4 cups beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat until shimmering.
- Add chopped onion and minced garlic; sauté until the onion is translucent.
- Add ground beef to the pot and cook until browned, breaking it up as it cooks.
- Drain any excess fat if necessary.
- Stir in diced tomatoes, beef broth, salt, pepper, and Italian seasoning.
- Bring to a boil, watching for bubbles on the surface.
- Add elbow macaroni and reduce heat to a simmer, stirring occasionally.
- Cook for about 10-12 minutes, or until the macaroni is tender but still al dente.
- Serve hot, garnished with fresh herbs if desired.
Notes
Serve with crusty bread, top with grated Parmesan cheese, or add a spoonful of sour cream for extra richness. Leftovers can be used for stuffed peppers or pasta bake.
