- 1/2 head of cabbage, chopped
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 can diced tomatoes (14.5 oz)
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Brown the beef for 5-6 minutes at medium-high until well-browned.
- Add onions and garlic for 2-3 minutes until translucent.
- Stir in carrots and celery for 4-5 minutes until they begin to soften.
- Mix in cabbage for 3-4 minutes until wilted.
- Pour in broth and tomatoes; heat until everything is combined well.
- Season with salt and pepper to taste.
Notes
The soup can be stored in the fridge for 3-4 days or frozen for 3-4 months. Reheat with a splash of broth for best results.
