- 1 lb ground beef
- 3 cups cooked rice (day-old rice works best)
- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots mix
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon sesame oil
- Salt and pepper to taste
- 2 green onions, sliced for garnish
Instructions
- Heat the vegetable oil in a large skillet over high heat until shimmering.
- Add the ground beef and cook until browned, breaking it apart as it cooks, about 5-7 minutes.
- Stir in the diced onion and minced garlic; cook for another 2 minutes until the onion is translucent.
- Add the frozen peas and carrots; stir-fry for 2-3 minutes until heated through.
- Push the beef and vegetables to one side of the pan and pour in the beaten eggs. Scramble them until fully cooked.
- Add the cooked rice, soy sauce, oyster sauce if using, and sesame oil; combine everything well.
- Season with salt and pepper, garnish with green onions, and serve hot.
Notes
Use day-old rice for optimal texture. Preparing all ingredients in advance will streamline the cooking process.
