Description

A hearty slow cooker chili made with chicken, white beans, and beer for a deep, smoky flavor.


Ingredients

  • 2 lbs chicken breast
  • 1 can (15 oz) white beans, drained
  • 1 can (15 oz) corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (12 oz) beer
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, cilantro, sour cream

Instructions

  1. Place the chicken breast at the bottom of the Crockpot.
  2. Add the chopped onion, minced garlic, white beans, corn, chicken broth, beer, cumin, chili powder, salt, and pepper.
  3. Stir everything to combine.
  4. Cover the Crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Shred the chicken in the pot and mix well before serving.
  6. Serve hot, topped with cheese, cilantro, and sour cream if desired.

Notes

Best eaten fresh the same day, but reheats on the stove with a splash of broth if needed. Let ingredients sit at room temperature for 30 minutes before cooking for better results.
