Description
A hearty slow cooker chili made with chicken, white beans, and beer for a deep, smoky flavor.
Ingredients

- 2 lbs chicken breast
- 1 can (15 oz) white beans, drained
- 1 can (15 oz) corn, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (12 oz) beer
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Optional toppings: shredded cheese, cilantro, sour cream
Instructions
- Place the chicken breast at the bottom of the Crockpot.
- Add the chopped onion, minced garlic, white beans, corn, chicken broth, beer, cumin, chili powder, salt, and pepper.
- Stir everything to combine.
- Cover the Crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
- Shred the chicken in the pot and mix well before serving.
- Serve hot, topped with cheese, cilantro, and sour cream if desired.
Notes
Best eaten fresh the same day, but reheats on the stove with a splash of broth if needed. Let ingredients sit at room temperature for 30 minutes before cooking for better results.
