Ingredients

  • 1 can butter beans, drained and rinsed

Instructions

  1. Heat a tablespoon of olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the chopped carrots and thyme, cooking for about 3-4 minutes until slightly softened.
