A filling and flavorful casserole that combines brown rice, black beans, and colorful vegetables, baked to perfection and tastes better the next day.

- 1 ½ cups uncooked long-grain brown rice
- 2 cups cooked black beans or 1 can, drained and rinsed
- 1 medium onion, diced
- 1 cup diced bell peppers (any color)
- 3 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 1 ½ cups vegetable broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika (optional)
- Salt and pepper to taste (start with 1 tsp salt)
- Fresh cilantro for garnish
- Lime wedges (optional)
Instructions
- Rinse 1 ½ cups of brown rice under cold water to remove excess starch.
- Combine the rice with 3 cups vegetable broth in a medium saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 45 minutes.
- Fluff the rice with a fork and set aside.
- Preheat the oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and bell peppers, cooking until softened, about 5-7 minutes.
- Add minced garlic and cook for another 1-2 minutes until fragrant.
- Combine the cooked brown rice, sautéed veggies, drained black beans, and canned diced tomatoes in a large mixing bowl. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Mix well.
- Spread the mixture evenly into your prepared casserole dish and cover with foil. Bake for 25 minutes.
- Remove the foil and bake for an additional 5-10 minutes to let the top get slightly crisp and golden.
- Sprinkle chopped fresh cilantro over the top and add lime wedges before serving.
Notes
Let the casserole cool for 5 minutes before serving. For best results, store leftovers in the fridge for up to 4 days.
