Description

A filling and flavorful casserole that combines brown rice, black beans, and colorful vegetables, baked to perfection and tastes better the next day.


Ingredients

  • 1 ½ cups uncooked long-grain brown rice
  • 2 cups cooked black beans or 1 can, drained and rinsed
  • 1 medium onion, diced
  • 1 cup diced bell peppers (any color)
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 1 ½ cups vegetable broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika (optional)
  • Salt and pepper to taste (start with 1 tsp salt)
  • Fresh cilantro for garnish
  • Lime wedges (optional)

Instructions

  1. Rinse 1 ½ cups of brown rice under cold water to remove excess starch.
  2. Combine the rice with 3 cups vegetable broth in a medium saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 45 minutes.
  3. Fluff the rice with a fork and set aside.
  4. Preheat the oven to 375°F (190°C).
  5. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and bell peppers, cooking until softened, about 5-7 minutes.
  6. Add minced garlic and cook for another 1-2 minutes until fragrant.
  7. Combine the cooked brown rice, sautéed veggies, drained black beans, and canned diced tomatoes in a large mixing bowl. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Mix well.
  8. Spread the mixture evenly into your prepared casserole dish and cover with foil. Bake for 25 minutes.
  9. Remove the foil and bake for an additional 5-10 minutes to let the top get slightly crisp and golden.
  10. Sprinkle chopped fresh cilantro over the top and add lime wedges before serving.

Notes

Let the casserole cool for 5 minutes before serving. For best results, store leftovers in the fridge for up to 4 days.
