Ingredients
- 2 pounds sweet potatoes (about 2–3 medium), peeled and cut into 1-inch cubes
- 3 tablespoons unsalted butter, melted
- 1/4 cup packed light brown sugar
- 1/2 cup chopped pecans
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Pinch of ground nutmeg (optional)
Instructions
- 1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
- 2. Place the cubed sweet potatoes in a large bowl.
- 3. In a small bowl, melt the unsalted butter. Pour the melted butter over the sweet potatoes.
- 4. Add the packed light brown sugar, ground cinnamon, salt, and the pinch of ground nutmeg, if using.
- 5. Toss everything together thoroughly until the sweet potato cubes are evenly coated.
- 6. Sprinkle the chopped pecans over the sweet potatoes and gently toss again to distribute them evenly.
- 7. Spread the coated sweet potato and pecan mixture in a single layer on the prepared baking sheet, ensuring no overcrowding.
- 8. Roast for 25-30 minutes, or until the sweet potatoes are tender when pierced with a fork and have developed browned edges.
- 9. Midway through roasting (around 15 minutes), give the pan a gentle shake or stir to promote even cooking and caramelization. Keep an eye on the pecans to prevent burning.
