- 1 lb chicken breast, cooked and shredded
- 1 cup rice
- 4 cups chicken broth
- 1 cup celery, diced
- 1 cup carrots, diced
- 1 onion, diced
- 1 cup buffalo sauce
- 1 cup heavy cream
- Salt and pepper to taste
- Blue cheese or ranch dressing for topping
Instructions
- Sauté onion, celery, and carrots in a large pot until softened, about 5-7 minutes.
- Add the shredded chicken, rice, and chicken broth to the pot. Bring to a boil.
- Stir in buffalo sauce and simmer for 15-20 minutes, or until rice is cooked.
- Reduce heat and stir in heavy cream; season with salt and pepper.
- Serve hot, topped with blue cheese or ranch dressing.
