Description

A quick and nourishing creamy butter bean dish with depth of flavor from sautéed garlic and onions.


Ingredients

  • 1 can butter beans
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 1 cup spinach or kale (optional)

Instructions

  1. Heat the olive oil in a pan over medium heat until shimmering.
  2. Add the chopped onion and cook until translucent, around 5 minutes.
  3. Stir in the minced garlic and thyme, cooking for an additional minute until fragrant.
  4. Add the butter beans with their liquid, then pour in the vegetable broth.
  5. Season with salt and pepper, then let it simmer for 10 minutes to allow flavors to meld.
  6. If using, stir in the spinach or kale just before serving to wilt gently.

Notes

Cook garlic just enough to release its fragrance without burning. If using fresh herbs, reduce quantity as they are more potent.
