Description

A hearty and comforting Cattle Drive Casserole recipe that’s easy to make with ground beef, corn, and creamy mushroom soup. Perfect for weeknight dinners and family meals.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) corn, drained
  • 1 can (10.5 ounces) condensed cream of mushroom soup, undiluted
  • 1/2 cup milk
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • 1 cup shredded cheddar cheese
  • Optional: 1/2 cup crushed tortilla chips for topping

Instructions

  1. 1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. 2. Brown ground beef in a large skillet over medium-high heat. Drain excess grease.
  3. 3. Add chopped onion and cook until softened, about 5-7 minutes.
  4. 4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. 5. Add undrained diced tomatoes, drained corn, undiluted cream of mushroom soup, and milk. Stir to combine.
  6. 6. Stir in chili powder, oregano, salt, and pepper. Taste and adjust seasoning.
  7. 7. Pour mixture into the prepared baking dish.
  8. 8. Sprinkle shredded cheddar cheese evenly over the top.
  9. 9. If using, sprinkle crushed tortilla chips over the cheese.
  10. 10. Bake for 20-25 minutes, or until bubbly and cheese is melted and lightly browned.
  11. 11. Let stand for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven until heated through.
