- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (15 ounces) corn, drained
- 1 can (10.5 ounces) condensed cream of mushroom soup, undiluted
- 1/2 cup milk
- 1 teaspoon chili powder
- 1/2 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- 1 cup shredded cheddar cheese
- Optional: 1/2 cup crushed tortilla chips for topping
Instructions
- 1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- 2. Brown ground beef in a large skillet over medium-high heat. Drain excess grease.
- 3. Add chopped onion and cook until softened, about 5-7 minutes.
- 4. Stir in minced garlic and cook for 1 minute until fragrant.
- 5. Add undrained diced tomatoes, drained corn, undiluted cream of mushroom soup, and milk. Stir to combine.
- 6. Stir in chili powder, oregano, salt, and pepper. Taste and adjust seasoning.
- 7. Pour mixture into the prepared baking dish.
- 8. Sprinkle shredded cheddar cheese evenly over the top.
- 9. If using, sprinkle crushed tortilla chips over the cheese.
- 10. Bake for 20-25 minutes, or until bubbly and cheese is melted and lightly browned.
- 11. Let stand for a few minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven until heated through.
