- 1 tablespoon olive oil
- 1 pound lean ground beef (85% lean or 90% lean)
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon dried thyme
- 1/2 cup beef broth
- 1 pound Yukon Gold potatoes, scrubbed and thinly sliced (about 1/8 inch thick)
- 1/2 cup shredded cheddar cheese
- 1/4 cup shredded Monterey Jack cheese
- 2 tablespoons chopped fresh parsley, for garnish (optional)
Instructions
- 1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- 2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground beef and cook until browned; drain excess grease.
- 3. Add onion to the skillet and cook until softened (5-7 minutes). Stir in garlic, salt, pepper, paprika, and thyme; cook for 1 minute.
- 4. Pour in beef broth, scraping up browned bits. Simmer for 2-3 minutes until slightly thickened.
- 5. Arrange thinly sliced potatoes evenly over the beef mixture in the skillet (or transfer beef to prepared baking dish first).
- 6. Cover skillet/dish tightly with aluminum foil.
- 7. Bake for 30-40 minutes, or until potatoes are fork-tender.
- 8. Remove foil and sprinkle cheeses evenly over potatoes.
- 9. Return to oven, uncovered, and bake for 5-8 minutes until cheese is melted and bubbly.
- 10. Let rest for 5-10 minutes before serving. Garnish with parsley, if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in a conventional oven at 350°F (175°C) until heated through, or in the microwave covered with a damp paper towel.
