- 2 medium zucchinis, sliced

- Olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic; sauté until translucent, about 5 minutes.
- Add ground beef and cook until browned, stirring frequently.
- Stir in the sliced zucchini and diced tomatoes, seasoning with Italian seasoning, salt, and pepper.
- Let the mixture simmer for about 5 minutes until zucchini begins to soften.

- Bake for 20-25 minutes until the cheese is bubbly and golden.

Notes
For a lighter option, substitute ground beef with ground turkey and zucchini with yellow squash. Let the casserole rest for 5-10 minutes before serving for better texture.
