Description

Transform leftover mashed potatoes into crunchy, cheesy bites perfect for any occasion.

Ingredients

Scale
  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 1 egg
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Combine the mashed potatoes, cheese, breadcrumbs, green onions, egg, salt, and pepper in a bowl.
  2. Mix until well combined, ensuring even distribution of ingredients.
  3. Scoop out small portions of the mixture and form into bite-sized balls, about one to two inches in diameter.
  4. Heat oil in a frying pan over medium heat until it reaches the right temperature for frying.
  5. Fry the bites until golden brown on all sides, about 3-4 minutes per side.
  6. Remove and drain on paper towels to absorb excess oil.
  7. Serve warm and enjoy the delightful contrast of textures.

Notes

Use cold leftover mashed potatoes for better texture. Don’t overcrowd the pan while frying.
