- 2 medium zucchinis
- 1 cup cooked summer squash, mashed or finely chopped
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh herbs (basil, parsley, or oregano)
- 2 cups marinara sauce
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips (about 1/4 inch thick).
- Lightly grill or roast the zucchini strips to soften them and bring out their natural sweetness.
- Mix the cooked summer squash, ricotta, mozzarella, Parmesan, fresh herbs, salt, and pepper until well combined.
- Place a spoonful of the cheese filling at one end of each zucchini strip and roll it up tightly.
- Spread a thin layer of marinara sauce on the bottom of a baking dish to prevent sticking.
- Arrange the zucchini rollatini seam-side down in the dish.
- Pour the remaining marinara sauce over the rollatini and drizzle with olive oil for added moisture.
- Cover with foil and bake for 25 minutes to allow the flavors to meld.
- Remove foil and bake for an additional 10-15 minutes until bubbly and golden on top.
- Serve hot, garnished with extra herbs if desired.
