Description

Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 2 cups cooked, shredded chicken (rotisserie chicken is a great shortcut here)
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Salt and freshly ground black pepper to taste
  • 6 ounces egg noodles
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. 1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook, stirring occasionally, until the vegetables have softened, about 8-10 minutes.
  2. 2. Add the minced garlic to the pot and cook for another minute until fragrant.
  3. 3. Pour in the chicken broth, add the cooked, shredded chicken, dried thyme, and dried rosemary. Season with salt and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for at least 20 minutes to allow the flavors to meld together.
  4. 4. While the soup is simmering, cook the egg noodles according to the package directions in a separate pot of boiling salted water. Drain the noodles well.
  5. 5. Once the soup has simmered and the flavors have developed, taste and adjust the seasoning with more salt and pepper if needed.
  6. 6. Ladle the hot soup into bowls. Add the cooked egg noodles to each bowl, or stir them directly into the pot if serving immediately.
  7. 7. Garnish with fresh chopped parsley, if desired.

Notes

Store cooled soup in an airtight container in the refrigerator for up to 3-4 days. It’s best to store the noodles separately if not consumed immediately. Gently reheat on the stovetop over low heat, adding separately cooked noodles during the last few minutes of reheating.
