- Olive oil (for sautéing)

Instructions
- In a large pot, heat olive oil over medium heat until shimmering.
- Add the chopped onion, garlic, carrots, and celery; sauté until softened, about 5 minutes.
- Add the diced chicken breast and cook until browned, about 5-7 minutes.
- Stir in the rice, chicken broth, and water; bring to a boil.
- Reduce heat, cover, and let simmer for about 20 minutes or until the rice is cooked.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs.
Notes
For added richness, consider using chicken thighs instead of breasts. Pair with crusty bread for a filling meal.
