Ingredients

- 1 pound of chicken breasts
- 4 cups of chicken broth
- 2 carrots, diced
- 2 stalks of celery, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of thyme
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions
- Heat the olive oil in a pot over medium heat. The oil should shimmer and be hot.
- Add the chicken breasts and brown for about 5-6 minutes on each side until they’re golden.
- Remove the chicken and add the onion, garlic, carrots, and celery. Sauté for 4-5 minutes until they’re soft.
- Return the chicken to the pot and pour in the chicken broth. Bring it to a boil, then reduce to a simmer.
- Stir in the thyme, salt, and pepper. Cover and let simmer for 25-30 minutes.
- Remove the chicken again, shred it with two forks, and return it to the pot. Stir to combine everything.
Notes
Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat gently over low heat.
