Description

Delicious and chewy chocolate chip banana bars made with ripe bananas, oats, and coconut oil.


Ingredients

  • 2 ripe bananas
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup melted coconut oil
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Mash the ripe bananas until smooth in a large bowl.
  3. Stir in the melted coconut oil, honey (or maple syrup), and vanilla extract until well combined.
  4. Mix the flour, oats, baking powder, baking soda, and salt in another bowl.
  5. Add the dry ingredients to the wet mixture gradually and mix until just combined.
  6. Fold in the chocolate chips, ensuring they are evenly distributed.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before slicing into bars and serving.

These bars can be stored in the fridge for up to 3 days and freeze well for up to 3 months.
