Ingredients

Scale
  • 1 lb shrimp, peeled and deveined
  • 2 avocados, diced
  • 2 cups mixed greens
  • 1 grapefruit, segmented
  • 1 orange, segmented

  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil over medium heat until shimmering.
  2. Add the shrimp and cook until pink and opaque, about 3-4 minutes per side.
  3. Season with salt and pepper.
  4. Combine mixed greens, diced avocado, grapefruit segments, orange segments, and red onion in a large bowl.

Notes

Be careful not to overcook the shrimp to avoid a chewy texture.
