Description

Ingredients

  • 8 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the split peas under cold water and set aside.
  2. Heat the olive oil over medium heat until it shimmers.
  3. Add the chopped onion, carrots, and celery; sauté until softened, about 5-7 minutes.
  4. Stir in the garlic and cook for another minute until aromatic.
  5. Add the split peas, vegetable broth, bay leaf, salt, and pepper, stirring to combine.
  6. Bring to a boil, then reduce heat and let simmer for 45-60 minutes until the peas are tender.
  7. Remove the bay leaf; blend the soup if a smoother texture is desired.
  8. Adjust seasoning and serve hot.

Notes

For a creamier soup, blend it. Can experiment with substitutions like sweet potatoes instead of carrots.
