Ingredients

  • 1 lb boneless chicken breasts
  • 4 cups chicken broth
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat until it shimmers. Add the chopped onions, carrots, and celery, sautéing until the vegetables soften, about 5 minutes.
  2. Stir in the minced garlic, dried thyme, and oregano; cook for another minute until fragrant.
  3. Add the boneless chicken breasts and chicken broth to the pot. Bring to a boil, then reduce heat to let it simmer for 20 minutes.
  4. Remove the chicken carefully, shred it using two forks, and return it to the pot.
  5. Introduce the diced potatoes to the soup and let it simmer until tender, about 10-15 minutes.
  6. Season with salt and pepper to taste, adjusting to your preference.
  7. Serve hot, garnished with fresh parsley.

Notes

Letting the soup simmer longer develops a richer broth. Be cautious not to overcook the chicken.
