Description

Ingredients

  • 1 lb ground beef
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked, ensuring it is no longer pink.
  2. Drain the excess fat to avoid a greasy dish.
  3. Combine the ground beef, black beans, corn, diced potatoes, diced tomatoes, and taco seasoning in a slow cooker.
  4. Mix well, ensuring the seasoning is evenly distributed.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  6. Sprinkle cheddar cheese on top about 30 minutes before serving and cover until melted.
  7. Season with salt and pepper to taste and serve hot.
