Description
A hearty and savory cowboy soup made with ground beef, tomatoes, and beans, perfect for busy nights.
Ingredients
Scale
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 2 cups beef broth
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Brown the ground beef in a large pot over medium heat until it’s no longer pink, draining excess fat as you go.
- Add chopped onion and minced garlic; sauté until onions turn translucent.
- Stir in diced tomatoes, kidney beans, corn, beef broth, chili powder, cumin, salt, and pepper; mix well.
- Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.
- Serve hot, garnished with chopped cilantro.
Notes
Ensure ground beef is well-drained to avoid greasiness. Use low-sodium beef broth for better flavor control.
