Description

A hearty and savory cowboy soup made with ground beef, tomatoes, and beans, perfect for busy nights.

Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Brown the ground beef in a large pot over medium heat until it’s no longer pink, draining excess fat as you go.
  2. Add chopped onion and minced garlic; sauté until onions turn translucent.
  3. Stir in diced tomatoes, kidney beans, corn, beef broth, chili powder, cumin, salt, and pepper; mix well.
  4. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.
  5. Serve hot, garnished with chopped cilantro.

Notes

Ensure ground beef is well-drained to avoid greasiness. Use low-sodium beef broth for better flavor control.
