Description

A hearty and creamy chicken noodle soup made with sautéed vegetables and cream cheese for rich flavor.


Ingredients

  • 2 cups cooked chicken, shredded
  • 8 cups chicken broth
  • 1 cup cream cheese
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 8 ounces egg noodles
  • Fresh parsley, for garnish

Instructions

  1. Sauté the onions, carrots, and celery over medium heat until softened.
  2. Add the garlic and cook for an additional minute.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the shredded chicken, cream cheese, and Italian seasoning.
  5. Stir until the cream cheese is melted and well combined.
  6. Add the egg noodles and cook according to package directions until tender.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with fresh parsley.

Notes

Best eaten fresh the same day; pasta softens if it sits. Can prepare the soup base ahead of time and add noodles closer to serving.
