Description

A fresh, crunchy, and creamy broccoli salad without bacon, packed with vibrant vegetables, seeds, and a tangy-sweet dressing.


Ingredients

  • 4 cups fresh broccoli florets
  • 1/4 cup red onion, finely sliced
  • 1/3 cup dried cranberries
  • 1/4 cup sunflower seeds
  • 1/2 cup mayonnaise (or vegan mayo)
  • 1/4 cup Greek yogurt (or dairy-free alternative)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup (or honey)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1. Wash and cut broccoli into small bite-sized florets.
  2. 2. Slice red onion finely and set aside.
  3. 3. In a large bowl, combine broccoli, red onion, cranberries, and sunflower seeds.
  4. 4. In a separate bowl, whisk mayonnaise and Greek yogurt until smooth.
  5. 5. Add apple cider vinegar, maple syrup, salt, and pepper to the dressing and mix well.

Notes
