- 4 cups fresh broccoli florets
- 1/4 cup red onion, finely sliced
- 1/3 cup dried cranberries
- 1/4 cup sunflower seeds
- 1/2 cup mayonnaise (or vegan mayo)
- 1/4 cup Greek yogurt (or dairy-free alternative)
- 1 tablespoon apple cider vinegar
- 1 tablespoon maple syrup (or honey)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- 1. Wash and cut broccoli into small bite-sized florets.
- 2. Slice red onion finely and set aside.
- 3. In a large bowl, combine broccoli, red onion, cranberries, and sunflower seeds.
- 4. In a separate bowl, whisk mayonnaise and Greek yogurt until smooth.
- 5. Add apple cider vinegar, maple syrup, salt, and pepper to the dressing and mix well.
- 6. Pour the dressing over the broccoli mixture.
- 7. Toss thoroughly until all ingredients are evenly coated.
- 8. Chill the salad for 10-15 minutes before serving for best flavor.
- 9. Stir again before serving and adjust seasoning if needed.
Notes
Store in an airtight container in the refrigerator for up to 3 days. Stir before serving. Not suitable for freezing as the dressing may separate.
