Ingredients

  • 2 boneless, skinless chicken breasts (1 pound), cut into bite-sized pieces
  • 8 oz small pasta (ditalini, shells, or elbow macaroni)
  • 2 medium carrots, diced (about 1 cup)
  • 4 cups fresh baby spinach, roughly chopped
  • 1 medium yellow onion, diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese (optional)
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. 1. Season chicken with salt and pepper. Heat 2 tablespoons olive oil in a large pot over medium-high heat. Cook chicken 5-6 minutes until golden brown. Remove and set aside.
  2. 2. Add remaining oil and butter to pot. Sauté onion, carrots, and celery for 5-6 minutes until softened.
  3. 3. Add garlic, thyme, and oregano. Cook 1 minute until fragrant.
  4. 4. Sprinkle flour over vegetables and stir constantly for 1-2 minutes.
  5. 5. Gradually add chicken broth while stirring. Add bay leaf and bring to boil. Reduce heat and simmer 10 minutes.
  6. 6. Add pasta and cook according to package directions minus 1-2 minutes.
  7. 7. Return chicken to pot and heat through 2-3 minutes.
  8. 8. Reduce heat to low and slowly stir in cream. Add spinach and stir until wilted.
  9. 9. Remove bay leaf, stir in Parmesan if using, and garnish with parsley before serving.

Notes

Store leftovers in refrigerator up to 4 days. Pasta will absorb liquid over time, so add extra broth when reheating. Can be frozen up to 3 months.
