A comforting and hearty soup featuring tender chicken, pasta, carrots, and fresh spinach in a rich, creamy broth. This complete meal soup is perfect for cold days and family dinners.

- 2 boneless, skinless chicken breasts (1 pound), cut into bite-sized pieces
- 8 oz small pasta (ditalini, shells, or elbow macaroni)
- 2 medium carrots, diced (about 1 cup)
- 4 cups fresh baby spinach, roughly chopped
- 1 medium yellow onion, diced
- 3 celery stalks, diced
- 4 garlic cloves, minced
- 6 cups low-sodium chicken broth
- 1 cup heavy cream
- 3 tablespoons olive oil
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and black pepper to taste
- 1/2 cup grated Parmesan cheese (optional)
- 2 tablespoons fresh parsley, chopped for garnish
Instructions
- 1. Season chicken with salt and pepper. Heat 2 tablespoons olive oil in a large pot over medium-high heat. Cook chicken 5-6 minutes until golden brown. Remove and set aside.
- 2. Add remaining oil and butter to pot. Sauté onion, carrots, and celery for 5-6 minutes until softened.
- 3. Add garlic, thyme, and oregano. Cook 1 minute until fragrant.
- 4. Sprinkle flour over vegetables and stir constantly for 1-2 minutes.
- 5. Gradually add chicken broth while stirring. Add bay leaf and bring to boil. Reduce heat and simmer 10 minutes.
- 6. Add pasta and cook according to package directions minus 1-2 minutes.
- 7. Return chicken to pot and heat through 2-3 minutes.
- 8. Reduce heat to low and slowly stir in cream. Add spinach and stir until wilted.
- 9. Remove bay leaf, stir in Parmesan if using, and garnish with parsley before serving.
Notes
Store leftovers in refrigerator up to 4 days. Pasta will absorb liquid over time, so add extra broth when reheating. Can be frozen up to 3 months.
