Description

A comforting and nourishing creamy chicken soup made without dairy or gluten. Features tender chicken, wholesome vegetables, and a velvety smooth broth for a satisfying meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 3 carrots, peeled and finely chopped
  • 3 celery stalks, finely chopped
  • 2 cloves garlic, minced
  • 8 cups gluten-free chicken broth
  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Salt and freshly ground black pepper to taste
  • ½ cup full-fat canned coconut milk (from a can, not a carton)
  • 2 tablespoons tapioca starch or arrowroot starch
  • ¼ cup cold water
  • 1 cup cooked potatoes, mashed or pureed
  • Fresh parsley, chopped (for garnish)

Instructions

  1. 1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook, stirring occasionally, until softened, about 8-10 minutes.
  2. 2. Add the minced garlic and cook for another minute until fragrant.
  3. 3. Pour in the gluten-free chicken broth. Add the chicken, thyme, and rosemary. Bring to a simmer, cover, and cook for 20-25 minutes, or until chicken is cooked through.
  4. 4. Remove the chicken from the pot and set aside to cool slightly.
  5. 5. In a small bowl, whisk together the tapioca starch (or arrowroot starch) and cold water until smooth.
  6. 6. Shred or chop the cooled chicken and return it to the pot.
  7. 7. Stir in the coconut milk and pureed potatoes.
  8. 8. Bring the soup to a gentle simmer over medium-low heat. Gradually whisk in the starch slurry. Cook, stirring constantly, for 5-7 minutes, or until thickened.
  9. 9. Season with salt and pepper to taste.
  10. 10. Ladle into bowls and garnish with fresh parsley.

Notes

Store leftover soup in airtight containers in the refrigerator for up to 4 days, or freeze for up to 2-3 months. Reheat gently on the stovetop or in the microwave.
