- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 cup vegetable broth or water
- 1 teaspoon turmeric powder
- 1 teaspoon salt
- 1 tablespoon olive oil or butter
- Fresh cilantro, for garnish
Instructions
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- Combine the rinsed rice, coconut milk, vegetable broth (or water), turmeric powder, and salt in a medium saucepan.
- Bring to a boil over medium heat, then reduce to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and stir in the olive oil or butter for added richness.
- Fluff the rice with a fork and garnish with fresh cilantro before serving.
Notes
Rinsing the rice thoroughly prevents it from becoming gummy. Store leftovers in an airtight container for up to 4 days or freeze for up to 2 months.
