- 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 1/2 cup sun-dried tomatoes, drained and roughly chopped
- Optional: Fresh basil or parsley for garnish
Instructions
- 1. Pat the chicken dry and season with salt and pepper.
- 2. Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes per side until lightly browned. (Optional step).
- 3. In the same skillet (or directly in the slow cooker), sauté chopped onion until softened, about 5 minutes. Add minced garlic and cook for 1 minute until fragrant.
- 4. Pour condensed cream of chicken soup and chicken broth into the slow cooker. Stir in heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper.
- 5. Add the seared chicken (or raw chicken) to the slow cooker. Stir in the sun-dried tomatoes.
- 6. Cover and cook on LOW for 4-6 hours, or on HIGH for 2-3 hours, until chicken is cooked through and tender.
- 7. Shred the chicken directly in the slow cooker or remove, shred, and return to the sauce. Stir to coat.
- 8. Garnish with fresh herbs if desired, and serve.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop, in the microwave, or in the oven.
