Description

Ingredients

  • 2 pounds starchy potatoes (Yukon Gold or Russet)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 teaspoons fresh thyme leaves
  • 2 teaspoons fresh rosemary, chopped
  • 1/2 cup shredded cheese (like cheddar or Gruyère)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 12-cup muffin pan with cooking spray.
  2. Wash the potatoes thoroughly and slice them into thin rounds, about 1/8 inch thick.
  3. Combine the butter, olive oil, minced garlic, thyme, rosemary, salt, and pepper in a large bowl.
  4. Toss the potato slices in the bowl with the herb mixture until evenly coated.
  5. Layer the potato slices in the muffin cups, slightly overlapping to create a spiral effect.
  6. Sprinkle shredded cheese on top of each galette.
  7. Bake for 35 to 40 minutes, or until golden brown and crispy.
  8. Allow the galettes to cool for a few minutes before lifting them out of the muffin pan.
