  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat a large pot over medium heat until hot, then add the ground chicken, cooking until browned and no longer pink — about 5-7 minutes.
  2. Stir in the diced onion, cooking until soft and translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for 30 seconds; you’ll know it’s ready when the aroma of garlic becomes fragrant and warm.
  4. Toss in the sliced carrots and diced celery, stirring well. Cook for another 3-4 minutes until the vegetables start to soften.
  5. Pour in the chicken broth and season with Italian seasoning, salt, and pepper. Allow the soup to come to a simmer, letting the flavors meld for about 10 minutes.
  6. Reduce the heat and slowly add the heavy cream, stirring until combined. Make sure to do this gently to prevent curdling.
  7. Taste and adjust seasoning as needed, adding more salt or pepper if desired.
  8. Serve immediately or allow to sit for a slight thickening.

Notes

Ensure your pan is adequately heated before adding the ground chicken to develop flavor. For a lighter version, substitute half-and-half for the heavy cream.
