- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced thinly
- 2 stalks celery, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat a large pot over medium heat until hot, then add the ground chicken, cooking until browned and no longer pink — about 5-7 minutes.
- Stir in the diced onion, cooking until soft and translucent, about 3-4 minutes.
- Add the minced garlic and sauté for 30 seconds; you’ll know it’s ready when the aroma of garlic becomes fragrant and warm.
- Toss in the sliced carrots and diced celery, stirring well. Cook for another 3-4 minutes until the vegetables start to soften.
- Pour in the chicken broth and season with Italian seasoning, salt, and pepper. Allow the soup to come to a simmer, letting the flavors meld for about 10 minutes.
- Reduce the heat and slowly add the heavy cream, stirring until combined. Make sure to do this gently to prevent curdling.
- Taste and adjust seasoning as needed, adding more salt or pepper if desired.
- Serve immediately or allow to sit for a slight thickening.
Notes
Ensure your pan is adequately heated before adding the ground chicken to develop flavor. For a lighter version, substitute half-and-half for the heavy cream.
