- 1 pound ground turkey
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups spinach or kale (optional)
Instructions
- Brown the ground turkey in a large pot over medium heat until no longer pink.
- Add the chopped onion, diced carrots, and diced celery, cooking until tender, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth, followed by the diced tomatoes, thyme, and oregano, mixing well.
- Season with salt and pepper to taste, then bring to a boil.
- Reduce heat and let it simmer for about 20 minutes before adding the spinach or kale, if desired.
- Cook for another 5 minutes until the greens are wilted.
Notes
For added flavor, taste and adjust seasoning throughout the cooking process. Consider adding a pinch of red pepper flakes for heat.
