Description

A light yet satisfying soup made with ground turkey, fresh vegetables, and hearty broth, perfect for busy weeknights.


Ingredients

Scale
  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups spinach or kale (optional)

Instructions

  1. Brown the ground turkey in a large pot over medium heat until no longer pink.
  2. Add the chopped onion, diced carrots, and diced celery, cooking until tender, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Pour in the chicken broth, followed by the diced tomatoes, thyme, and oregano, mixing well.
  5. Season with salt and pepper to taste, then bring to a boil.
  6. Reduce heat and let it simmer for about 20 minutes before adding the spinach or kale, if desired.
  7. Cook for another 5 minutes until the greens are wilted.

Notes

For added flavor, taste and adjust seasoning throughout the cooking process. Consider adding a pinch of red pepper flakes for heat.
