Description

A refreshing and nutritious salad combining lentils and bulgur with fresh herbs and vegetables, perfect for a light yet filling meal.


Ingredients

  • 1 cup green or brown lentils
  • 1/2 cup bulgur wheat
  • 2 cups water
  • 1 large cucumber, diced
  • 1 large tomato, diced
  • 1/2 red onion, finely chopped
  • 1 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Rinse the lentils and combine them with 2 cups of water in a pot. Bring to a boil, then reduce to a simmer and cook for about 20-25 minutes until tender. Drain any excess water and allow to cool.
  2. Soak the bulgur in boiling water for about 10 minutes or until it absorbs the water. Drain and fluff with a fork.
  3. Combine the cooled lentils, bulgur, cucumber, tomato, red onion, parsley, and mint in a large mixing bowl.
  4. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl. Pour over the salad and toss gently to combine.
  5. Serve chilled or at room temperature, enjoying the fresh flavors.

Notes

Let the salad rest for 30 minutes before serving for the best flavor. Store in an airtight container for up to 3 days.
