Description
A rich and flavorful vegetarian twist on the popular ‘Marry Me Chicken’ dish. This Creamy Marry Me Chickpeas recipe features tender chickpeas simmered in a luxurious sauce of sun-dried tomatoes, garlic, Parmesan, and cream. Easy enough for a weeknight, decadent enough for guests. Better than chicken!
Ingredients
- 2 tablespoons olive oil
- 1 large yellow onion, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- Β½ teaspoon red pepper flakes (optional)
- Β½ cup sun-dried tomatoes, oil-packed, drained and chopped
- 2 (15-ounce) cans chickpeas, drained and rinsed
- 1 cup vegetable broth
- ΒΎ cup heavy cream
- Β½ cup grated Parmesan cheese, plus more for serving
- 2 tablespoons chopped fresh basil for garnish (optional)
- Salt and freshly ground black pepper to taste
Instructions
- 1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add onion and cook until softened and translucent, 6-8 minutes.
- 2. Add minced garlic, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute until fragrant.
- 3. Stir in chopped sun-dried tomatoes and cook for 1-2 minutes.
- 4. Add drained and rinsed chickpeas. Stir to coat and heat through for 2 minutes.
- 5. Pour in vegetable broth, bring to a simmer, and reduce slightly, scraping up browned bits.
- 6. Reduce heat to medium-low, stir in heavy cream and Parmesan cheese until melted and smooth.
- 7. Season with salt and pepper to taste.
- 8. Simmer gently, uncovered, for 5-7 minutes until sauce thickens.
- 9. Serve hot, garnished with fresh basil and extra Parmesan.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop with a splash of broth or water, or in the microwave.
