A vibrant and creamy potato salad featuring blanched green beans, perfect for summer gatherings.
Ingredients

- 1 lb Green beans
- 2 cups Potatoes, cubed
- ½ cup Mayonnaise
- ¼ cup Sour cream
- 1 tbsp Dijon mustard
- ½ Red onion, diced
- Salt to taste
- Black pepper to taste
Instructions
- Boil the potatoes until tender, then drain and let cool.
- Blanch the green beans in boiling water for a few minutes until bright green, then drain and cool in ice water.
- Mix the mayonnaise, sour cream, Dijon mustard, diced red onion, salt, and black pepper in a large bowl until smooth and creamy.
- Cut the cooled potatoes into cubes and add them to the bowl.
- Add the green beans and gently toss everything together until well-coated.
- Chill in the refrigerator for at least an hour before serving.
Notes
For a lighter dressing, consider substituting plain yogurt for some of the mayonnaise.
