Ingredients

  • 8 ounces orzo pasta
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 cup artichoke hearts, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the orzo according to package instructions, drain, and set aside.
  2. In a large skillet over medium heat, add olive oil. Once hot, add garlic and sauté until fragrant, about 1 minute.
  3. Add the shrimp and cook until they turn pink, about 3-4 minutes. Remove shrimp and set aside.
  4. In the same skillet, add sun-dried tomatoes, spinach, and artichokes. Sauté for 3-4 minutes until the vegetables start to soften.
  5. Pour in the heavy cream and stir to combine. Cook for another 2-3 minutes, allowing it to thicken slightly.
  6. Add the cooked orzo, shrimp, and Parmesan cheese to the skillet. Stir well to combine, ensuring everything is coated in the creamy sauce.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh basil.
