Description

A quick and high-protein dinner featuring gluten-free pasta with a creamy sauce made from lentils, beans, and nutritional yeast.


Ingredients

  • Gluten-free pasta
  • Red or green lentils
  • Beans (any variety)
  • Sunflower or pumpkin seeds
  • Nutritional yeast
  • Plant-based milk (almond or soy)
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper

Instructions

  1. Cook gluten-free pasta according to package instructions until al dente.
  2. Combine lentils, beans, and seeds with water in a pot and bring to a boil. Cook until tender, about 15 minutes.
  3. Blend the cooked lentils, beans, and seeds with nutritional yeast, plant-based milk, garlic powder, onion powder, salt, and pepper until smooth.
