Description
Deliciously spicy taquitos filled with a flavorful chickpea mixture, perfect for a quick weeknight meal.
Ingredients
Scale
- 1 can chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1/2 cup hot sauce (adjust to taste)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cumin
- 12 corn tortillas
- 1 avocado, sliced
- Fresh cilantro, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Mash the chickpeas with a fork or potato masher until mostly smooth, allowing for a slightly chunky texture.
- Stir in the olive oil, hot sauce, garlic powder, onion powder, and cumin until well combined.
- Warm the tortillas slightly to make them pliable; this helps prevent cracking when rolling.
- Place a spoonful of the chickpea mixture in each tortilla, roll them tightly, and place seam-side down on a baking sheet.
- Bake for 15-20 minutes or until crispy and golden.
- Serve with avocado slices and garnish with fresh cilantro.
Notes
Ensure chickpeas are adequately mashed to prevent filling from falling apart. Adjust hot sauce to taste for desired heat level.
