Description

Deliciously spicy taquitos filled with a flavorful chickpea mixture, perfect for a quick weeknight meal.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1/2 cup hot sauce (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 12 corn tortillas
  • 1 avocado, sliced
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mash the chickpeas with a fork or potato masher until mostly smooth, allowing for a slightly chunky texture.
  3. Stir in the olive oil, hot sauce, garlic powder, onion powder, and cumin until well combined.
  4. Warm the tortillas slightly to make them pliable; this helps prevent cracking when rolling.
  5. Place a spoonful of the chickpea mixture in each tortilla, roll them tightly, and place seam-side down on a baking sheet.
  6. Bake for 15-20 minutes or until crispy and golden.
  7. Serve with avocado slices and garnish with fresh cilantro.

Notes

Ensure chickpeas are adequately mashed to prevent filling from falling apart. Adjust hot sauce to taste for desired heat level.
