Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cauliflower florets with olive oil, chili powder, cumin, salt, and pepper until evenly coated.
- Spread the cauliflower on a baking sheet in a single layer and roast for about 25-30 minutes or until tender and golden.
- Prepare the cilantro lime crema by blending the cilantro, sour cream or Greek yogurt, and lime juice until smooth.
- Warm the tortillas in a skillet or microwave until pliable.
- Assemble each tortilla with roasted cauliflower and drizzle with cilantro lime crema.
