Description

Quick and flavorful cauliflower tacos served with a zesty cilantro lime crema, perfect for busy weeknights.

Ingredients

Scale
  • 1 medium head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Warm tortillas
  • 1 cup chopped fresh cilantro
  • 1/2 cup sour cream or Greek yogurt
  • Juice of 1 lime
  • Toppings of choice (e.g., avocado, salsa, radishes)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cauliflower florets with olive oil, chili powder, cumin, salt, and pepper until evenly coated.
  3. Spread the cauliflower on a baking sheet in a single layer and roast for about 25-30 minutes or until tender and golden.
  4. Prepare the cilantro lime crema by blending the cilantro, sour cream or Greek yogurt, and lime juice until smooth.
  5. Warm the tortillas in a skillet or microwave until pliable.
  6. Assemble each tortilla with roasted cauliflower and drizzle with cilantro lime crema.
  7. Add any additional toppings as desired and serve warm.

Notes

Ensure cauliflower florets are cut into similar sizes for even roasting. Use fresh cilantro for best flavor.
