Description

Quick and satisfying wraps filled with crispy chickpeas, creamy avocado, and fresh greens, perfect for busy weeknights.


Ingredients

  • 4 large flour tortilla wraps
  • 2 small avocados (or 11.5 larger ones)
  • 2 heads little gem lettuce
  • 4 Tbsp shaved parmesan or pecorino style cheese
  • 1 lemon (zested, optional)
  • 1 can chickpeas (drained)
  • 1 tsp smoked paprika
  • 1 tsp honey
  • 0.5 tsp garlic powder (or 1 minced clove of fresh garlic)
  • 1/4 cup Greek yogurt
  • 2 tsp extra virgin olive oil
  • 1/2 clove garlic
  • 1/2 lemon (juiced)
  • 2 tsp capers (in brine)
  • 1/2 tsp Dijon mustard
  • 2 Tbsp grated parmesan or pecorino style cheese

Instructions

  1. Begin by preparing the dressing. Blend the Greek yogurt, lemon juice, Dijon mustard, garlic, capers, and some of the lemon zest until smooth and creamy. Set aside to allow the flavors to meld.
  2. Heat some olive oil in a frying pan over medium heat, then add the drained chickpeas. Let them sit undisturbed for about 1 minute to ensure they crisp up.
  3. Once they’re lightly browned, sprinkle in the smoked paprika, garlic powder, and honey. Stir to coat the chickpeas evenly.
  4. While the chickpeas are cooling slightly, prepare the remaining ingredients and soften tortilla wraps if necessary.
  5. Toss the little gem lettuce with a small amount of the dressing.
  6. On each tortilla, layer lettuce, sliced avocado, shaved cheese, and a few pinches of lemon zest.
  7. Add spoonfuls of crispy chickpeas and drizzle with additional dressing.
  8. Roll the tortilla tightly, ensuring all fillings are secure, and slice diagonally before serving.

Notes

To achieve the best texture, ensure chickpeas are well-drained and dry. If omitting lemon zest, add a splash of hot sauce for extra flavor.
