- 1 head of cauliflower, cut into florets
- 1 bell pepper, diced
- 1 carrot, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- Combine the cauliflower florets, diced bell pepper, diced carrot, and red onion in a large bowl.
- Whisk together olive oil, apple cider vinegar, Dijon mustard, minced garlic, and salt and pepper in another bowl.
- Pour the dressing over the vegetable mixture and toss until everything is well coated.
- Allow the salad to marinate in the refrigerator for at least 30 minutes before serving.
- Stir in the chopped parsley just before serving for a fresh finish.
Notes
Cut flowerets into smaller pieces for better texture. Fresh herbs can elevate the dish flavor.
