Description

Crispy on the outside and fluffy on the inside, these Butter Swim Parmesan Roasted Potatoes are the perfect side for any meal.


Ingredients

Scale
  • 1 stick of butter (1/2 cup)
  • 1/3 cup grated parmesan cheese
  • 1+ tbsp Montreal steak seasoning (or seasoning of choice)
  • 1 pound petite red potatoes
  • Non-stick cooking spray

Instructions

  1. Add a stick of butter to a 9×13 baking dish or large sheet pan, spreading it evenly.
  2. Place the baking dish in a cool oven.
  3. Turn the oven to 400° F and let the butter melt as the oven preheats; remove the pan once the butter is melted.
  4. While the butter is melting, wash and cut the potatoes in half.
  5. In a small bowl, combine the parmesan cheese with 1 tablespoon of Montreal steak seasoning, or the seasoning of your choice.
  6. Evenly sprinkle the parmesan mixture over the melted butter.
  7. Place the potatoes cut side down onto the pan, right on top of the parmesan and seasoning mixture.
  8. Spray the tops of the potatoes with non-stick spray (or brush them with oil) and sprinkle on a little more seasoning.
  9. Bake uncovered in the center rack for 30-40 minutes or until potatoes are tender, with a crispy top.

Notes

To ensure the best results, let the butter fully melt before adding the potatoes. Be generous with cheese and seasonings for vibrant flavor.
