Instructions

  1. Heat a skillet over medium heat and add the cooked rice, pressing it down lightly to create a crispy layer.
  2. Flip the rice to crisp the other side, continuing to cook until it reaches your desired texture.
  3. Whisk together the soy sauce, peanut butter, sesame oil, honey or maple syrup, and rice vinegar until smooth.
  4. Add the mixed vegetables, green onions, and half of the chopped peanuts to the skillet with the crispy rice, stirring to combine and warm them through.
