Ingredients

  • 16 ounces smoked sausage, cut into 1-inch rounds
  • 1 pound potatoes, peeled and chopped
  • 1 pound fresh green beans, trimmed
  • 1/3 cup onion, diced
  • 1 garlic clove, minced
  • 1 cup broth
  • 1 1/2 teaspoons salt
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper

Instructions

  1. Add all ingredients to the slow cooker and stir to mix well, ensuring everything is evenly coated.
  2. Cook on HIGH for 2 to 3 hours or LOW for 4 to 6 hours, until the potatoes are tender and the flavors have melded together.
  3. Alternatively, for an Instant Pot method, add all ingredients, stir to combine, close the lid, and seal the valve. Set high pressure and cook for 12 minutes. When the cooking time is complete, quick-release the pressure.

Notes

For a vegetarian version, substitute smoked sausage with vegetable broth and adjust other ingredients accordingly. Be mindful of the size of your vegetable cuts to ensure even cooking.
