Description

Ingredients

  • 2 pounds orange-fleshed sweet potato
  • Olive oil (or avocado oil, to coat)
  • Sprinkle salt

Instructions

  1. Preheat the oven to 425°F.
  2. Cut off the ends of the sweet potato, then stand it on its end and cut in half lengthwise.
  3. Slice one half into long strips, aiming for 1/4 inch in width.
  4. Toss or brush the sweet potato slices with oil on both sides.
  5. Line a baking sheet with parchment paper and arrange the slices in a single layer.
  6. Bake for 10 minutes at 425°F until tender.
  7. Broil each side for an additional 5 minutes, flipping to get both sides golden brown.
  8. For air fryer, cook at 375°F for 10 minutes, flipping once.
  9. Store in a single layer in the freezer for up to 3 months.
