Description

Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, peeled and diced
  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Push the onions to the side and add the ground beef, cooking until browned and fully cooked, about 5-7 minutes.
  4. Sprinkle in the paprika, oregano, salt, and pepper, mixing well to combine.
  5. Add the sweet potatoes, stirring to coat, and cover for about 5 minutes to steam them and promote tenderness.
  6. After five minutes, add the zucchini slices and stir, cooking for another 5-7 minutes until all the vegetables are tender.
  7. Serve hot, garnished with fresh parsley.

Notes

Make sure to dice sweet potatoes into uniform pieces for even cooking. Adjust spices based on your preference. Overcrowding the skillet can lead to steaming instead of browning.
