  • 1/4 cup chopped fresh parsley (optional for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add the ground beef, breaking it apart with a spatula, and cook until browned, about 5-7 minutes. Drain any excess fat that accumulates.
  3. Stir in the diced bell peppers, chopped onion, and minced garlic, cooking until the vegetables are tender, approximately 5 minutes.
  4. Season the mixture with salt, black pepper, and Italian seasoning, ensuring everything is well combined.
  5. Pour in the diced tomatoes and the tomato sauce. Mix thoroughly and bring to a simmer.
  6. Reduce heat to low and let it cook for about 10 minutes, allowing the flavors to meld.
  7. Stir in the cooked rice and let the entire mixture heat through for about 5 minutes.
  8. Sprinkle the shredded mozzarella cheese on top, covering the skillet until the cheese melts and becomes bubbly.
